Tell us a bit about yourself My name's Dave and I'm the founder of Kombu Kombucha. I've always been a massive foodie, but I started my professional life as a geologist. Kombucha might seem completely unrelated, but it was the perfect mix of creativity and science that drew me to it.
What’s the story behind Kombu? After a strong desire to live the self-employed life and some coercion from family, it was time to turn my homebrew experimentation into a living. That journey started a few years ago and it's been a wild ride.
What inspired you to create your style of booch? I felt that there was a gap in the market for a good looking premium buch and it turns out there was. I also love making all things fermented, it was a win-win really.
What do you love most about being a brewer? It's very rewarding building something from the ground up. Creating a product that people love, matched with positive feedback makes it all worth it.
What is your favourite Kombu brew and why? My favourite flavour changes daily, but I probably reach for a bottle of Ginger & Lemon Myrtle most regularly. It personifies what Kombu is all about; big, bold flavours, highlighting the intensity of native Aussie ingredients. I'm a sucker for Bundaberg ginger beer as well, this is my version.
