Plant-based recipe ideas - kombucha cocktails included

We decided to pimp our home delivery boxes with food and booze recipe ideas using the beautiful seasonal fruit and veg by Roaming Fresh, gin or vodka by South Coast Distillery and our Booch Bar products. If you're not getting home delivery or missed out on our recipe insert, this will be the place to get the goods. ZUCCHINI FITTERS with LEMON BASIL CREAM

FRITTERS

  • 1 1/2 pounds grated zucchini

  • 1/2 teaspoon salt

  • 1 tablespoon ground flax seeds

  • 3 tablespoons water

  • 3 tablespoons finely chopped chives

  • 1/4 cup chickpea flour

  • 1 tablespoon arrowroot powder

  • Salt and pepper, to taste

  • 1/3 cup vegetable oil

CASHEW CREAM

  • 1 cup cashews

  • 3/4 cup water

  • Zest of 1 lemon

  • a squeeze of lemon juice

  • 1/2 cup basil

  • 1 teaspoon dijon mustard

  • Salt and pepper, to taste

METHOD

  1. Mix flax seeds and water and let sit 5-10 minutes until thickened.

  2. Place zucchini in a bowl and toss with 1/2 teaspoons salt. Let stand 10 minutes, then wring zucchini dry in a clean kitchen towel. Place zucchini in a large bowl and gently mix in flax seed mix, flour, chives, and arrowroot powder; season with salt and pepper.

  3. Heat oil in a large skillet over medium heat. Drop large tablespoon dollops of zucchini mixture into skillet, flattening slightly; cook until golden and crisp, about 3 minutes per side. Transfer fritters to a paper towel–lined plate; season with salt.

  4. For cashew cream, combine all ingredients together in a high-speed blender, and blend until smooth.

  5. Serve with lemon basil cashew cream.

And now for the fun stuff

POMEGRANATE KOMBUCHA GIN FIZZ

  • 60ml Pomegranate Grape Kombucha

  • 60ml ounces Gin (we use South Coast Distillery)

  • Squeeze of lemon juice

  • 120ml Sparkling Water

METHOD

  1. Into a cocktail shaker full of ice add gin and fresh lemon juice. Shake well.

  2. Into the bottom of a highball glass pour in pomegranate kombucha. Strain gin and lemon juice from the cocktail shaker on top. Top off with sparkling water.

  3. Serve with a lemon peel garnish or a cherry.
